The Estate of Azienda Agricola Vecchio Metato is situated in the hills nearby Colle di Compito, Lucca, in Tuscany, an area dedicated for centuries to the traditional production of the extra virgin olive oil, that is internationally recognized for its superior quality. Olives are cultivated on terraces at an altitude of about 200 – 300 m.a.s.l The cultivars in the estate are: Frantoio, Leccino, Moraiolo, Maurino and Pendolino. These traditional Tuscan varieties, inserted into the hilly microclimate of this area, reach the highest qualitative expression in a fruity, fragrant and very pleasant palate oil.
The olives are hand-picked when they are still green, approximately 15 days prior to their maturation time. It ensures a significant improvement of the organoleptic characteristics of the oil, moreover, the olives are pressed every day in a modern certified olive press, to assure the best quality of an EVOO - Extra Vergin Olive Oil, certificated by the Consorzio Olio Toscano IGP.
Using extra virgin olive oil every day in the kitchen, certainly improves and enhances the flavour of any food, but it is also a proven way of contributing to the health of your family and guests.
